the best banana bread ever

we were gone this whole past weekend {i was in a fabulous friend's wedding} and i came home to this:

so i decided {by default! ha} to make banana bread out of rotten bananas

ive mentioned this before, but my mother in law laura makes THE best breads EVER.
period.

i have made every banana bread under the sun: traditional, banana nut, banana chocolate chip, banana with some glaze, etc.  but the best ever, hands down, is the tried and true banana bread recipe by La.

and it goes as follows:
{hoping this isnt some strictly guarded family secret...but she doesnt strike me as the type to even have those :)}

Laura's Banana Bread

2 c sugar 
1c oil
4 eggs
3-5 smushed bananas {riper the better}
2c flour
1.5 tsp salt
1 Tbs baking soda
1 c buttermilk
preheat oven to 300.
beat together sugar and oil in a stand mixer {just makes it easier if you have one...if not, hand mixers work great}.  add eggs and bananas. mix.  
in a separate bowl, mix flour, salt, and baking soda.
alternate adding flour mixture and buttermilk to sugar mixture.
grease pans, 4 small loaf pans cook about 30 min at 300 and then 30 min at 350.
larger pans may take a little longer, and muffins are ready earlier.

let cool on racks or in pans.  when they are almost all the way cool, but still a wee bit warm, place in zip loc bag for storage.  this is the special roe family trick...it keeps the bread ever so moist and delicious.

this time i did one and a half times the recipe and made muffins, a huge loaf pan, and a bundt pan.  even after giving some away its embarrassing how little we have left :)

  8. Sipsey and I made this and had it for breakfast every single day last week! But what's sad is that I usually just eat the bananas that you call rotten. So you should see the ones I made our bread with! I have more really rotten bananas to make more this week. Oh yeah, I added walnuts to half the batch, which made it even more delicious to me!
