Pumpkin Bread

As promised, here is my mother-in-law's fun fall recipe that just happens to be quite fantastic as well:

  • 3.5 c flour
  • 3 c sugar
  • 2 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
mix ingredients. make hole in center and add:
  • 4 eggs
  • 1 c oil (canola)
  • 1 tsp vanilla
  • 1 can pumpkin
  • 2/3 c water
Mix all together. Pour into 3 regular sized loaf pans with Baker's Joy, or 6 smaller loafs. (I always do the smaller ones - and for some reason this time it actually made 7 small loafs) Bake at 350 degrees for about 1 hour (or less if in the smaller pans).
Eat it all, give some as gifts, or freeze some for later!

*Edited to add: Baker's Joy is cooking spray with flour
