so, since ive been feeling normal recently, ive been cooking and eating a whole heck of a lot more than .... normal.
im in that happy pregnant stage where i gain four-six pounds over the course of two weeks.
lovely.
these stripes arent helping the matter
so i thought i would share the recipes/links to some pretty delicious treats.
here goes!
easiest pumpkin bread ever
found recipe HERE, but all it requires is box of cake mix {yellow or spice}, 1/2tsp pumpkin spice, and 1 can of pumpkin. i made one large loaf and a few teeny muffins. the batter is pretty thick but it does indeed rise {just not as much as regular bread}. i cooked it at 350 for over 30 minutes. but dont cook it too long, dont want it to dry out!
rating: A+ for ease of recipe, A- for taste. {i prefer my MIL's recipe but it was still delish and sometimes you just do whats easier!}
mexican chicken crock pot soup
very delicious. however, please note....WATCH THE CHIPOTLE CHILI PEPPER IN ADOBO SAUCE. it does NOT need two AND all that sauce. we cried all the way through our supper due to the spice intensity, but kept eating bc it was so good. will make again, just with maybe ONE chile pepper and like a TEASPOON of sauce. whew!
rating: A for ease {crock pot!!}, B+ for taste, due to intense spiciness, i bet it would rate much higher with adjustment
the "make-this-dip-and-you-will-be-famous" dip
or...spicy white cheese dip
{no picture bc every time its been made its been GONE}
first had this dip at my sisters engagement shower. her soon-to-be sister in law made it and it was a hit with both the men and the ladies. BIG hit.
{for you friend/readers this is the appetizer i made last week}
1 small onion diced
2 garlic cloves minced
2 10oz cans diced tomatoes with green chiles {aka rotel}
1 cup chopped cilantro {i just chopped up an entire bunch of it}
3/4 c milk
1/2 tsp gound cumin
1/2 tsp black ground pepper
2lbs monterey jack cheese {i could only find that big bag of shredded mj and colby}
8oz cream cheese, softened
mix all and pour into 2 qt casserole {or little larger...it says it will reduce but mine did not!}. bake at 400 for 25 minutes or until top is golden brown. {took longer than 25 minutes for me}
serve with fritos or scoops.
absolutely addicting!!!

you really should try baking the pumpkin in a bundt pan. not only is it prettier but then you can drizzle some cream cheese glaze icing on top. zomg. nom nom nom. much tastier!

ReplyDeletei made the chicken lime soup last night!!!! i didnt make it in the crockpot though, and it only took like 20 minutes. i did half the recipe. i chopped up one SMALL chipotle pepper and one tsp of sauce and it was pretty spot on, maybe could've done a little less sauce.
pioneer woman's steak salad has chipotle and adobo too and she must have a tongue of steel because her proportion left hollis and me crying and runny and snotty. ick but this soup is phenomenal. did you know it was by rachael ray? i usually dont like her stuff but yum!
