ZUCCHINI CHIPS AND RECIPES

Zucchini chips
These were so great...I thought I made way too many but Stephen and I devoured them.  I should have used FOUR zucchinis.

Zucchini Chips

fresh Zucchini, sliced thinly {I chopped up two for two people and wished I used two more!}
bread crumbs {I used panko}
parmesean cheese grated or shredded but chopped fine
Jane's Mixed up Salt {or any seasoned salt}
garlic powder
pepper
milk

Mix about 1/2 cup breadcrumbs, 1/2 cup parmesean cheese, seasoned salt, pepper, and garlic powder in a small bowl.
Pour about 1/4 cup milk in separate bowl.
Drop zucchini pieces in milk then dredge in breadcrumb mixture
Place in single layer on baking sheet covered in foil sprayed with cooking spray. {depending on how many you do, you might need another pan}
Bake at 425 for 30 min or until crispy and browned.  Some of the chips fried to a nice brown crisp and they were STILL good.

...And Lauren I served it with simple yellow saffron rice out of the package {a staple in my household!}, since you said you aren't "in" to zucchini :)

  3. Thanks for telling me about the rice! After reading about the zucchini chips, you may have changed my mind!! I can't wait to see before and afters of the playroom. I need DETAILS because ours looks awful. I'll just copy everything you do! :)
