i said it.
not much to report here, just putting off folding clothes so thought i would blog :) i wish our weekend was relaxin' as the post title would suggest, but im not sure 4mo old + 3yr old = relaxing.
we ventured out to the american cancer society's chili cook-off down town yesterday. {visit three years ago} emory was fed and happy, it was 11:30, gorgeous weather, happy bennett, good parking space, phil and teds rollin pretty, we were golden. until we got the princess out of her cozy phil and teds seat...and havoc broke loose.
there was screaming
high pitch screaming
on and off for two hours.
im at a loss. on the positive side, bennett was happy and we saw a bunch of friends and the weather was amazing and i love my city.
but then there was that high pitch screaming...we still dont know why. we have just accepted the fact that our incredibly laid back, HAPPY baby has one hell of a temper. {sorry, but heck just doesnt do it justice...}
on the ride home we realized we did not have any chili at the CHILI cook-off.
so i came home, looked in my pantry, and made some chili.
i used this recipe from allrecipes.com and i have to say it is indeed very easy and very tasty! not chili cook-off winning caliber, but very good basic flavorful use-what-you-probably-already-have chili. {do we sense a trend here? 90% of the dinners i "cook" consist of me looking in the pantry and asking myself...what can i make with this?}
my only changes?
i used 1.3lbs ground turkey, only had half an onion to dice, i used one 14.5oz can crushed tomatoes and one 14.5oz can of stewed tomatoes, only 1.5tbs chili powder {believe me it was plenty! dont see the need for two whole tbs!}, and sadly had run out of cumin but it was still simply delicious.
of course i ate mine with scoops, but i always have to have a bit of crunch with my chili!
these are also dangerously good as dessert...

update: we have an appointment at EIGHT TWENTY tonight for emory...i think she has an ear infection and we canNOT have another night like last night! i really dont like my babies hurting...
