chocolate coca-cola cake

im not a big fan of coke, but i am a huge fan of coca-cola cake. my mom would occasionally make them when we were younger, usually for one of my sisters bdays {never mine...i always had carrot cake}. she made it again recently at the beach, and stephen loved it. so, for his bday, i had to test it out myself.


it did not disappoint.

due to work running late for the bday boy, instead of the planned date night we ordered pizza and ate cake. neither one of us was disappointed.

i encourage you, no, beseech you, no, implore you to try it out on your family.

or just on yourself one afternoon when you feel like you need some quality chocolate-time. {laura? :) }

Chocolate Coca-Cola Cake

**Prepare the icing during the last 10 minutes of baking so it is ready to spoon onto the warm cake.**

Yield

Makes 12 servings

Ingredients

  • 1 cup butter
  • 1/3 cup cocoa
  • 1 cup cola soft drink
  • 2 cups all-purpose flour
  • 1 1/3 cups sugar
  • 1 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups miniature marshmallows
  • Chocolate Coca-Cola Icing

Preparation

Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat.

Combine flour, sugar, and baking soda in a large bowl; stir in butter mixture. Add eggs, and stir until blended. Stir in buttermilk, vanilla, and marshmallows.

Pour into a lightly greased 13- x 9-inch baking pan. Bake at 350ยบ for 25 to 30 minutes or until a pick inserted in center comes out clean. Remove from oven; spread Chocolate Coca-Cola Icing over warm cake.

Icing:

Ingredients

  • 1/2 cup butter
  • 1/4 cup cocoa
  • 1/3 cup cola soft drink
  • 3 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped pecans

Preparation

Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat; stir in powdered sugar, vanilla, and pecans. Spoon immediately over warm cake.

{note: i did not add the pecans (contrary to popular belief we are not very nutty around here) and i decreased the sugar by about 1/8 to 1/4 cup. believe me, its plenty sweet!}

  2. OMG My residents and I were just talking about recipes in social hour (I work at an Assited Living)anyway, one lady said she had the best recipe for coca-cola cake, and I've been looking for one. How funny that you put it on your blog today!

  6. I recall, that just a couple of weekends ago, when I made this, I, in my infinite wisdom (scatter brain moment), forgot to put the eggs in it! Stray from a BAKING recipe?! It worked; I have mouths and empty dish to back me!

    I love your blog! I loved reading about your date night. Jay's birthday was last Thursday and our anniversary was Friday. Our date night was put on hold as well due to surgery!
