sunday supper

(disclaimer: over the course of the next few months, dont be alarmed if nearly every recipe i post has something to do with at least one, if not all, of the following: tomatoes, basil, zucchini)


so its sunday.  you come home after a long weekend away with friends where you ate a bunch of chips and dips and french fries and fried seafood and consumed college-level amounts of wine and/or beer.  you havent been to the grocery store since last week, and when you check your garden you have zucchini the size of footballs and handfuls of ripe grape tomatoes.  your basil has grown to a staggering 3' tall.

i would highly recommend you try this as your easy, lite sunday supper fare:  (and grocery-store-bought ingredients would work just wonderfully!)



Garden Fare Pasta
chopped zucchini
chopped grape tomatoes
chopped fresh basil
lemon
white wine
shredded parmesan cheese
whole wheat pasta (bc honestly it doesnt really taste that different from regular pasta, and you gotta get those whole grains in)

cook pasta according to package directions.  while pasta cooks, heat olive oil in skillet.  add zucchini, tomato to skillet and cook until crisp-tender (dont over-cook! keep those fresh-from- the-garden flavors alive!!).  lower heat and add about 1/4 cup white wine and the juice from half a lemon.  add salt and pepper to taste.  add some italian seasoning and crushed red pepper to taste.  drain pasta.  combine pasta and tomato-zucchini mixture in a bowl.  add handful of chopped fresh basil and juice from other half of lemon.  add 1/4 cup (or more) shredded parmesan cheese.  mix and serve!

as you can see, measurements arent really my thing, and this recipe is just to the best of my memory.  SO, add and subtract amounts according to your taste.  serve with crusty french bread.
