Since Bennett is now eating table food, which is sometimes easier than baby food (he can feed himself), I have been trying to find things that I can cook for us, but that he can eat too. Which is difficult, since Stephen and I both like spicy, flavorful dishes with lots of crazy food in it (yes Stephen now eats all my crazy foods with me; crazy=not guaranteed to be found on your WalMart shelves).
Anyway, the following is something my mom has been making for years and years, a type of dish we like to call "comfort food." And here it is:
Chicken Casserole
4 cooked and chopped chicken breasts (I just boil them)
1c uncooked Minute rice (or two cups of any cooked rice)
2 cans "cream of" soup (I use one mushroom and one chicken)
1c sour cream (fat free does just fine)
1/2c chicken broth
crushed crackers (Ritz, Toll House, etc - however much you like)
melted margarine (however much you like)
combine everything except crackers and margarine, pour in greased casserole dish. pour crushed crackers on top, pour melted margarine on top of that. cook at 350 degrees until bubbly.
Simple and sweet and Bennett approved and oh so yummy. We serve with butter beans, but that part is not required

ReplyDeleteSounds yummy! I love crazy food too. The spicier the better. It has been adjustment cooking at our house, but anytime anyone has a new recipe, I love trying it out.
