Mexican Lasagna
1 lb ground beef
1 (16 ounce) can whole kernel corn, drained
1 (15 ounce) can tomato sauce
1 cup salsa/picante sauce
1 T chili powder
1.5 tsp cumin
1 (24 ounce) container low fat cottage cheese
2 large eggs (or 3 backyard chicken eggs :) )
1/4 c grated parmesan cheese
1 tsp dried oregano
1/2 tsp garlic salt
12 (5 inch) corn tortillas
1 cup (4 ounces) shredded cheddar cheese

Brown ground beef in a skillet, drain and return to pan.  Stir in corn and next four ingredients, bring to a boil.  Reduce heat and simmer until heated through.  Remove from heat
Combine cottage cheese in a separate bowl with next four ingredients.
Arrange 6 corn tortillas on bottom of lightly greased 9x13, with edges of tortillas going up the side of the dish about 1.5".  Spoon half of meat mixture over tortillas, top with cottage cheese mixture.  Arrange remaining six tortillas over cheese, top with remainder of meat.

Bake at 375 for 30 minutes or until thoroughly heated.  Sprinkle with cheddar cheese.  Let stand for 10 minutes before serving.

Chicken Picadillo
This is a long time favorite of ours.  The kids were less than pleased…even though it is just chicken and golden raisins and salsa with a side of rice and beans.  Sounds kid friendly enough to me! {Just not friendly to MINE I guess :)  The adults still love it.}

Homemade Chicken Pot Pie
such wonderful comfort food that is SO easy to put together.  I sure it would taste even more divine with a homemade crust, but honestly I created this recipe in the midst of multiple-infant-parenting so the easier the better is/was my motto!

Chicken and Brie Sandwich with Roasted Cherry Tomatoes
another long time favorite!! The flavors are amazing together.  Served it with a cream of asparagus soup that was sub-par so I will not list it here.
